Chewy Chocolate Buttercups






What you'll need:

For the base:


1/2 cup cashews 

4 tbsp coconut oil (melted)

1 tsp vanilla extract 


Middle layer:

6 dates 

2 tbsp coconut oil (melted)

2 tbsp maple syrup

1 tbsp peanut butter


Topping


Melted chocolate ( i used leftover chocolate from Easter)

Pinch of salt


Blend all the base ingredients together, until smooth. Then spoon the mixture into muffin cases. This creates the base layer for the buttercups.


Next you need to blend the dates, coconut oil, peanut butter and maple syrup together. Spoon the mixture into the middle of each case.


Let it set in the fridge for 30 minutes. 


Then melt the chocolate in the microwave and pour on top of each muffin case to cover the middle. Sprinkle a pinch of salt on top.


Set in the fridge for another 30 minutes and enjoy 😉
