Halloween Tea Brack


















Ingredients 

50ml whiskey
200ml cold tea
200g mixed fruit peel
200g sultanas
225g flour
110g light brown sugar
1 egg

Method 

Place the fruit and sultanas in a bowl. Soak the fruit and sultanas overnight in the cold tea and whisky. Place the bowl in the fridge.
Let the fruit soak up most of the liquid. Drain any of excess liquid into another bowl for later.
Mix the flour, sugar and egg into the fruit mixture.  Add some of the excess liquid from the other bowl to make the mixture nice and moist. You should have a thick runny mixture you might not need to add all of the excess juice.





Then grease a round cake tin and pour the mixture into the tin. Place on the middle self in the oven at 170 and cook for 1 hour. Stick a knife into the mixture to check if the middle is cooked. Once the knife comes out clean remove the cake from the tin and allow to cool on a wire tray and enjoy.
