Pumpkin spice cake





Ingredients


225g self raising flour

175g light brown sugar
175g butter
3 eggs
4 tbsp pumpkin puree
2 tsp cinnamon
1 tsp ginger
3/4 tsp grounded cloves
2 tsp nutmeg
3/4 tsp mixed spice
Pumpkin seeds and mixed nuts to decorate

Method

Beat the sugar and butter together until smooth. Then add the eggs and some of the flour.  Mix all the spices in with the flour. Then gently add the rest of the flour into mixture using a spatula. Add the pumpkin puree into the cake mixture.
Grease a bread tin and pour the mixture into the tin. Sprinkle some pumpkin seeds and nuts on top.
Heat the oven to 150°c . Place the tin onto the middle shelf of the oven. Cook for roughly 40 to 50 minutes.
