Pumpkin Spice Banana Slices
Ingredients
150g flour1/4 tsp baking powder
Pumpkin spice (cloves, mixed spice, cinnamon, nutmeg and ginger)
3 eggs
1 mashed banana
1 tsp vanilla essence
50g butter
50g brown sugar
50g caster sugar
For the butter icing
50g butter4 tsp vanilla essence
150g icing sugar
2-4 tbsp water
Method
Mix the flour, baking powder and pumpkin spice together in a large bowl.
In another bowl mix together the rest of the ingredients until smooth.
Then gradually add the mixture into the flour mixture gently.
Line a baking tray with greaseproof paper. Turn the oven to 160°c. Pour the mixture into the baking tray and cook for 25 to 30 minutes or until it is golden brown.
Once cooked lift the cake out from the baking tray and turn the cake upside down onto a wire tray. And peel the greaseproof paper off the back of the cake. Let the cake cool down.

To make the butter icing get a clean bowl and use an electric mixer and mix together the ingredients. You can add more vanilla essence or icing sugar depending on how sweet you like the icing to be.
Once the cake is cooled turn it over and using a spatula spread the icing on top and sprinkle it with pumpkin seeds or pecans and enjoy.
