Christmas Pudding

Ingredients

400g sultanas
400g raisins
400g currents
200g mixed peel
1 rind of a lemon
200g ground Almonds
1 can of stout
1/2 glass whiskey
400g breadcrumbs
3 eggs
200g butter
300g brown sugar
1 tsp mixed spice and 1 tsp cinnamon
4 cooking apples

Makes 2 puddings. 









Method

Place all the fruit into a large mixing bowl. Let the fruit soak overnight in the whiskey and stout.
Mix in all the rest of the ingredients.
Grease two pudding bowls. Divide the mixture evenly into the two pudding bowls. Then cover the top of the puddings with two layers of greaseproof paper.  Then place a layer of tin foil over the top and tie with string around it to keep it in place.
Turn the oven to 150⁰c . Then get a large roasting tray and place to two pudding bowls into it. Fill the tray with water to cover half of the pudding bowls. Wrap two large pieces of tin foil on top of the roasting tray to cover the puddings so no water can escape. Then cook for 6 to 7 hours .
