Butternut squash soup

I really enjoy making this soup. It's super easy to make and it's my son's favourite after school meal. I like to make it as easy as possible. I started buying my butternut squash already diced and ready to use. It's so handy and can be got in most shops. This is a slimming world inspired recipe and is Syn free.

Ingredients

2 bags of diced butternut squash or 1 whole butternut squash 
1 onion 
1 carrot
1 clove of garlic
1 carrot 
2 vegetable cubes
Chili flakes
Pinch of paprika

First get a large pot. Cut up the onion, garlic and carrot and add to the pot.  Then add the butternut squash and potato. To prepare the stock boil water. Measure out 1litre of water and add the two stock cubes mix and add to the pot. Bring the soup to the boil. Let it simmer for 30 minutes. Check the vegetables are soft and then use a hand blender to blend until there is no lumps. I then like to add a pinch of chili flakes and a pinch of paprika.
